I need to decide on some icons. Would be awesome if a couple of these would work.

I see the issue with the icons. The same icon you may want to use for collapse/expand categories is most likely one you'd use for Add. An option would be to simply label the icon as "Expand/Collapse Categories" and "Add Category" with the icon next to it.
